Today, Sen. David Vitter (R-La.), Chairman of the Small Business & Entrepreneurship Committee, announced Billy’s Boudin & Cracklin of Krotz Springs, La to be Small Business of the Week.

“For the past 20 years, Billy’s Boudin & Cracklin has perfected its family recipes while demonstrating a unique ability to showcase Louisiana’s authentic flavors,” said Vitter. “It’s wonderful to see small businesses like this that are passionate and share our state’s rich traditions with both Louisianians and nonlocals alike. I am honored to recognize Billy’s Boudin & Cracklin as Small Business of the Week.”

Patsy and Billy Frey first opened Billy’s Boudin & Cracklin in 1995 as a convenience store, which has since expanded to three locations in the Acadiana region. Today, the three stores produce over 3,000 pounds of boudin daily and sell over 1.7 million of their signature “boudin balls” annually.

As Chairman of the Small Business Committee, Vitter is continuing the tradition of honoring local small businesses each week.
